Darjeeling Tea

Tea planting in the Indian District of Darjeeling began in 1841 by Arthur Campbell, a Civil Surgeon who worked for the Indian Medical Service. Darjeeling black is the most popular blend of tea compared to its Green, White and Oolong relations. The ‘poshest of teas’, this will make a great addition to your day if you’re in a lazy and scruffy mood. It is famed for its clean cut taste and crystalline sweetness, but can sometimes push an element of wine like taste that tea connoisseurs will describe as ‘muscatel’.

Green Tea – Japanese Sencha

Description

Our green tea is made from the finest Japanese Sencha. It has a delicate sweet flavour, whilst also giving a slight earthy and vegetal taste. Japanese Sencha gives these unique flavours due to the quick steaming process upon harvesting. It is then traditionally rolled and shaped by hand, creating the unique cylindrical shape of Sencha. To enjoy the perfect cup of Sencha tea, the water should be heated to 80°c and the leaves should be infused for around 2 minutes. The leaves can be given multiple steeps until all the flavourings have diminished.

Lemon Verbena Tea

Oolong Tea – Ti Kuan Yin

Description

Literally translated, Tie Guan Yin means ‘Iron Goddess of Mercy’. Beautiful to taste and stunning on the eye, this is one of the finest grades of Oolong tea and comes from the Fujian province in China. Oolong undergoes a very fine 8 stage process that is complex and requires expertise. The final stages of Oolong tea involve hand rolling many, many times so when steeped in water it unravels, thus opening into beautiful whole leaves. The infusing leaves will slowly turn the water a Greenish to Yellowish colour, and will wash a sweet taste across your pallet. These leaves can be re-brewed a few times until the flavours are exhausted.
